How Recipe Scaling Works
When doubling or halving a recipe, it's simple. But for specific numbers of servings, we use the formula:
Example: If a recipe yields 6 servings but you need to feed 15 people, the multiplier is 15 ÷ 6 = 2.5. Every ingredient in the recipe (like flour, eggs, water) must be multiplied by 2.5 to achieve the same taste and consistency.
Baking Scaling Tips
- Baking is Chemistry: Liquid ratios are critical. If scaling up a cake recipe by 4x, you might need to adjust baking times, leavening agents, or pan size.
- Weight vs. Volume: Always prefer weighing ingredients in grams rather than cups when scaling. Grams scale linearly without compaction errors.
- Spices: Spices do not always scale linearly. For large scaling factors (e.g. 5x+), start with slightly less spice (like salt, cayenne pepper) and adjust to taste.
